Wild Jungle Peanut Butter Sauce

2 bunches organic chopped cilantro
2 cups fresh squeezed orange juice
1 teaspoon cayenne
1 teaspoon salt
1 teaspoon coriander
8 cloves
16 oz Raw Organic Wild Jungle peanut butter ( or organic peanut butter, if you don’t care that it is 100 % raw)

Combine all ingredients in a vitamix until creamy and smooth.

 

Pad Thai Noodles

Organic Beets

Organic Carrots

Organic Zucchini

Using a mandoline or spiral slicers, cut three vegetables into pasta-like strands.

 

In a large mixing bowl, toss the Pad Thai noodles and ample dressing and let marinate for an hour. Served chilled or room temperature and top with HEMP/PUMPKIN Parmesan ( recipe in a previous post and you can search for it in the SEARCH Box on my site).

Garnish with fresh lime slices and a few Raw whole peanuts or cashews.
